How to Make Watermelon Cakesicles

These cute little creations combine the joy of cake with the refreshing colours of summer. Whether you're planning a poolside party, a backyard barbecue, or simply want to indulge in a fun baking project, this step-by-step guide will walk you through each stage of crafting these adorable watermelon cakesicles.

Tools you will need for this project:

  • Marshmallow Fluff (or any type of filling you want)

  • Candy Melts You can either use white and add oil colours, or use coloured candy melts

  • Watermelon mold

  • Cakesicle sticks (usually come with this mold)

  • Edible Glitter (Discount Code BUTTER10 for 10% off)

  • Oil Based Colours in Green, Lime, White, Black, and Melon (Discount Code BUTTER10 for 10% off)

  • Offset Spatula

  • Piping Bag

  • Spoon

  • Trusting Needle or Toothpick

  • Small brush

Instructions

  1. In a heat proof bowl, melt the candy melts in the microwave at 30 seconds intervals. This means, place the bowl in the microwave for 30 seconds, remove, stir, place it again for 30 seconds, remove, stir, and so on. It should take a total of a minute or a minute and a half. It’s super important not to burn the chocolate so if you have a strong microwave, opt for 20 seconds instead.

  2. If you’re using white candy melts, add a few drops of Melon colour. If you’re using coloured candy melts, proceed by adding the melted chocolate to your mold. Make sure to only fill where the melon colour should go (leaving the green part of the watermelon empty). To cover the sides, it’s easier to use a brush.

  3. Gently shake and tap the mold to make sure no air bubbles are trapped. Set aside to set (do not place in the freezer of fridge).

  4. In a separate heat-proof bowl, add a small amount of candy melts and repeat the process of melting (melt at 20 seconds because it’s a smaller amount).

  5. When the candy melts are fully melted, dye using the colour Green.

  6. Using a trusting needles or a toothpick, draw the lines of the watermelon. Create as much details as you want.

  7. Allow to set for a few minutes.

  8. In a third and final bowl, melt some candy melts do dye using the colour Lime. Use this colour to fill the whole “green” area of the watermelon.

  9. Before the Lime colour sets, add your cakesicle stick. Give it a few shakes to make sure no air bubble are trapped and that everything is smooth and even.

  10. Set your cakesicle mold in the freezer for 2-3 minutes.

  11. For the filling, fill the piping bag with marshmallow fluff. You can use whichever filling you want (be as creative as you want!).

  12. Remove the mold from the freezer and fill it with the marshmallow fluff. Make sure you leave a tiny space for the chocolate to seal the back of the cakesicle (I leave about 1-2 mm).

  13. Once your filling is nice and even, pour melted chocolate on the back using the Melon colour.

  14. Shake to even our the chocolate and place the mold in the freezer for around 5 minutes so that the chocolate is fully set.

  15. Gently remove the cakesicle from the mold (start by releasing the sides, then push on the bottom to release the whole cakesicle).

  16. With a clean brush, use the white oil based paint to paint the white part of the watermelon.

  17. Paint the seeds using a black oil based colour.

  18. Note that oil based colours when used as paint take a while to set and dry so make sure not to wrap or touch the cakesicles (it’s always better to use edible paint).

  19. Finally, spray some edible silver glitter.
