Soft and fluffy apple crumble cinnamon rolls with a cinnamon sugar filling, diced apples, a buttery crumble topping, and cream cheese glaze. Perfect for fall, Thanksgiving, and Christmas!
Add all the dough ingredients except the butter to a stand mixer fitted with a dough hook. Mix until a dough forms. If it's too dry or shaggy, add a splash of milk at a time until it comes together without sticking.Add the softened butter and mix until incorporated. Increase the speed slightly and knead for at least 5 minutes, until the dough is smooth and pulls away from the sides of the bowl.Transfer to a greased bowl, cover, and let rise at room temperature for at least 2 hours.
2. Make the Crumble Topping
Combine the flour, brown sugar, butter, and cinnamon using your hands. The mixture should hold together when squeezed but crumble when poked. Cover and refrigerate until needed.
3. Prepare the Fillings
Mix the softened butter, granulated sugar, and cinnamon in a bowl until combined. Set aside.Wash, peel, and dice the apples into small cubes (250 g). Mix with the brown sugar, cinnamon, cornstarch, and lemon juice. Set aside.
4. Assemble the Cinnamon Rolls
Transfer the risen dough to a lightly floured surface without kneading it again. Roll into a rectangle, approximately 26 × 43 cm (10 × 17 inches). Add a little flour if the dough sticks.Spread the cinnamon sugar butter over the dough. Squeeze the excess liquid from the apples, reserving the liquid, and distribute the apples evenly over the dough.Cut horizontally into 6 equal strips and roll each into a cinnamon roll. You can also cut vertically for more, smaller rolls.Place in a greased baking dish, divide the reserved apple liquid evenly over the rolls, cover, and let rise for another 30–60 minutes.
5. Bake the Cinnamon Rolls
Preheat the oven to 180°C (350°F). Sprinkle the refrigerated crumble over the rolls and bake for 20–25 minutes, until lightly golden and cooked through.
6. Prepare the Glaze
While the rolls bake, mix the cream cheese, powdered sugar, and vanilla extract until smooth.
7. Glaze and Serve
Remove the cinnamon rolls from the oven and let cool for 10 minutes. Spread the cream cheese glaze over the warm rolls and enjoy!
