Ingredients
  

  • 3 Cups Cooked Rice
  • 1 Chicken Breast
  • 1 Medium Onion
  • 2 Garlic Cloves
  • 2 tsp Minced Ginger Fresh
  • 1 1/2 Cups Mixed Vegetables (Carrots, peas, corn…)
  • 2 Eggs
  • 3 Tbsp Soy Sauce
  • 1 Tbsp Sesame Oil
  • Salt & Pepper (to season the chicken)
  • 2 Tbsp Vegetable Oil
  • Green Onions for Garnishing Optional

Instructions
 

  • Start by preparing your ingredients. Peel and mince the ginger, mince the garlic, chop the onion, and dice the chicken into small cubes.

  • In a pan (medium to high heat), heat vegetable oil and add the chicken. Season with salt and pepper, cook until fully done, then remove and set aside.

  • Sauté the onions until golden, then stir in the garlic and ginger. After a few seconds, add the vegetables and cook until they start to soften.

  • Make space in the center of the pan, crack in the eggs, and scramble them. Once cooked, mix with the vegetables and add the chicken back in.

  • Add the cooked rice, soy sauce, and sesame oil. Stir well until everything is combined and heated through. Serve with green onions if desired.
