Cut chicken into large pieces. Cube onions, peel and slice carrots. Slice mushrooms and cut prunes in half.Grill chicken in a drizzle of olive oil or butter in a pot until golden. Set aside. Start cooking your basmati rice now.
In the same pot, cook onions and carrots for a few minutes until golden in color. Add mushrooms, prunes, and chicken back to the pot. Mix well.
