40gcream cheese(more or less - use the spread for this recipe)
2slicesof cheesefor the bow
1small carrotfor the bow decorations
2sprigs fresh rosemaryDill also pairs well here
1eggbeaten (optional, for egg wash)
Instructions
Cut & shape the dough
Preheat your oven according to the pastry package instructions. Unroll the dough onto a lined baking sheet and place a bowl in the center. Cut around the bowl to create a wreath shape, then remove the center. Prick the pastry with a fork and, optionally, brush with beaten egg for a golden finish.Bake according to the package instructions until golden and crispy. Remove from the oven and let cool completely before adding the toppings.
Prepare and assemble the toppings
Wash and dry the vegetables and herbs. Cut the smoked salmon into strips and roll them. Slice the lemon, cut the cherry tomatoes into 3–4 slices each, and slice the cooked beetroot. Use a small round cutter to cut circles from the beetroot. Have your arugula and sliced olives ready.Arrange the arugula over the cooled pastry, followed by the smoked salmon, tomatoes, beetroot, olives, and lemon. Spread everything evenly around the wreath. Transfer the cream cheese to a piping bag fitted with a star tip and pipe small decorations between the toppings.
Add the final details
Use a heart-shaped cutter to cut two hearts from the cheese slices and arrange them with their pointed ends facing each other. Add two strips of cheese underneath for the ribbons. Cut a thin carrot strip and use a smaller heart cutter to make two carrot hearts for the center of the cheese hearts. Finish with a cherry tomato in the middle.Add fresh rosemary sprigs around the wreath. Serve as soon as possible to keep the pastry crispy. You can prepare the toppings ahead of time, but I recommend assembling the wreath just before serving.
