Mozzarella prosciutto skewers made spooky with olives for eyes and a red balsamic glaze. A fun and easy Halloween appetizer that looks creepy but tastes amazing.
Slice each prosciutto piece into 3 long strips. Wrap one strip around each mozzarella ball, then thread the wrapped mozzarella balls onto skewers (I used 3 balls per skewer).
Slice the green olives into rings, I used pitted olives to make it easier. Use a straw to punch small rounds out of the black olives.
Now, place 1 green olive ring onto each mozzarella, and press one black olive circle inside each green ring to create the pupil.
Stir beetroot powder into the balsamic glaze until it's very well combined, the glaze will get thicker as well . Drizzle over the skewers so they look like bloody eyeballs.
