This healthy sweet potato taco recipe is filled with protein, low in carbs, and so tasty. It’s easy to make with ingredients you likely already have at home, and it’s absolutely delicious!
Brush the sweet potatoes with olive oil, sprinkle some salt, poke some holes, and bake in the oven at 428°F (220°C) for 40 to 60 minutes, or until tender.
In a pan, heat butter or olive oil (or both). Add diced onions and cook until slightly golden. Stir in tomato paste and mix well.
Add ground beef to the pan and season with salt, onion powder, garlic powder, paprika, and black pepper (you can also use taco seasoning insead). Cook until the beef is browned and fully cooked.
Carefully cut open the baked sweet potatoes and mash the inside slightly. Add a teaspoon of butter and a pinch of salt for creaminess, if desired, and mix again.
Fill with the beef mixture and add toppings as described above.
