I’ve always loved the combination of sweet and sour, and strawberries are one of my favorites. Like most people, I can’t resist them, but I also hate wasting them, especially with how pricey they are (seriously, what’s up with the prices nowadays?!).
Anyways, you know how it goes… you buy a box, planning to toss them on pancakes or blend them into a smoothie, but the second you wash them, the countdown begins. They don’t last for long! That’s why I love this strawberry arugula salad, it’s the perfect way to use up those strawberries while they’re still fresh and it’s ready in under 10 minutes! It also looks quiet fancy, so if you have some people over, specially during the summer, you need to make this!

What you need to make Arugula salad with strawberries:
- Arugula (I buy a pre-washed bag)
- Strawberries
- Olive Oil
- Red Onion
- Feta Cheese
- Walnuts or Pecans
- Balsamic Glaze (Or balsamic vinegar + honey)
- Salt & Pepper

Can I use other greens instead of arugula?
->Yes! While arugula adds a peppery bite, you can swap it for spinach, mixed greens, or even romaine for a milder flavor.
What can I use instead of feta cheese?
->If you’re not a fan of feta, try goat cheese, mozzarella, or even parmesan for a different taste and texture.
What dressing goes best with strawberry arugula salad?
->A balsamic glaze works perfectly, but you can also use balsamic vinaigrette, honey mustard, or a lemon olive oil dressing for a different twist.
You can easily turn this strawberry arugula salad into a full meal by adding quinoa and grilled chicken. I followed the same steps, but after plating the arugula, I added a cup of cooked quinoa mixed with a little lemon juice, then topped it with the onions, strawberries, walnuts, a grilled chicken breast, and finished it off with a drizzle of balsamic glaze. I skipped the feta this time but you can absolutely keep it.

Steps to Make Arugula Strawberry Salad:
- Start by washing the arugula and placing it in a bowl. If you’re using pre-washed arugula like I do, just toss it straight in. Add salt, pepper, and olive oil, then mix everything well until every leaf is evenly coated.

- Divide the coated arugula onto plates. Top each with diced strawberries, sliced red onions, crumbled feta, and chopped walnuts.

Finish with a drizzle of balsamic glaze. That’s it!
No balsamic glaze? No problem! Just mix 1 tablespoon of balsamic vinegar with 1 teaspoon of honey for a quick homemade alternative.

This strawberry arugula salad is light, fresh, and pairs well with so many dishes. For a more filling meal, serve it with grilled chicken, steak, or even grilled salmon. It also goes well with quiche or frittata, making it perfect for brunch.
And if you enjoy wine, a chilled Sauvignon Blanc or Rosé complements the flavors beautifully!

Arugula Strawberry Salad with Balsamic Glaze
Ingredients
- 4 Cups Arugula
- 2 Tbsp Olive Oil
- A Pinch of Salt & Pepper
- 6 Medium Strawberries
- 1 Small Red Onion
- 40 g Feta Cheese (More or less)
- 2 Tbsp Chopped Walnuts (More or less)
- Balsamic Glaze to drizzle
Instructions
- Wash the arugula and place it in a bowl. If using pre-washed arugula, simply add it to the bowl. Season with salt, pepper, and olive oil, then toss until well coated.
- Divide the coated arugula onto plates. Top with chopped strawberries, sliced red onions, walnuts, and crumbled feta. Drizzle with balsamic glaze before serving.
