This dumpling soup is easy to make, full of flavor, and is ready in no time! Made with store-bought dumplings, it requires really simple ingredients!

My son is really into Chinese food, and this dumpling soup with bok choy is one of his favorites. It’s warm, cozy, and super easy to make, just what we need on cold winter days! I grab store-bought dumplings with the cleanest ingredients I can find, and the whole meal is ready in about 20 minutes. If you’re looking for a dumpling soup recipe easy to make, this one is a winner. My son loves it, and I love how simple it is to put together!

Ingredients to make Dumpling Soup:
- Store-bought dumplings (You can use whichever flavor you want)
- Onion
- Garlic cloves
- Ginger
- Mushrooms
- Bok choy
- Carrot
- Fresh cilantro
- Chicken stock
- Soy sauce
- Sesame oil
- Vegetable oil
- Salt
- Green onions

Instructions to make an easy soup with dumplings:
- Chop the onion into small cubes and cut the carrots into thin strips so they cook evenly. Grate the garlic and ginger to bring out their flavor.
- Pick out a few cilantro leaves for garnish and set them aside (we will use them in step 4). Roughly chop the rest, leaving a tiny bit of the stems attached to the leaves. Instead of using dried coriander, we add the stems to the pot with the carrots and onions for extra flavor.

- Heat the vegetable oil in a large pot over medium-high heat. Add the onion and carrots and cook for 1 to 2 minutes until slightly softened.
- Stir in the garlic, ginger, and cilantro with tiny stems, then cook for another minute until fragrant.

- Pour in the chicken stock, soy sauce, and sesame oil. Stir well and bring to a simmer.

- Meanwhile, chop the mushrooms into bite-sized pieces and cut the bok choy into quarters, keeping the leaves and stems intact.
- Add the bok choy, mushrooms, and cilantro leaves to the pot. Stir to combine.

- Add the dumplings to the pot and stir gently. Bring to a boil and cook according to the instructions on the package.
- Finally, stir in the chopped green onions. Taste and adjust the salt if needed.

This dumpling soup is super flexible, you can use chicken, pork, shrimp, or vegetable dumplings, or even swap them for wontons. If you want a vegetarian version, just use vegetable dumplings and replace the chicken broth with vegetable broth. You can even add cubed tofu for extra protein!
Feel free to mix in your favorite veggies like bok choy, spinach, or napa cabbage. If you love spice, kick up the heat with chili oil, Sriracha, gochujang, or chili flakes!

Ingredients
- 1 bag store bought dumplings 560g – approx. 24
- 1 onion
- 2 Cloves Garlic
- 1 Tbsp ginger
- 6 mushrooms
- 3 Bok choy
- 1 Carrot
- ½ Bunch of cilantro
- 2 Litres chicken stock
- 3 Tbsp soy sauce
- ½ Tbsp sesame oil
- 2 Tbsp vegetable oil
- ½ tsp salt
- 4 Green onions
Instructions
- Start by chopping the onion into small cubes. Cut the carrots into thin strips (julienne) so they cook evenly. Grate the garlic and ginger to release their flavor.Pick out a few cilantro leaves and set them aside (we will add them in a later step), then roughly chop the rest, leaving a bit of the stems. We use the stems for flavor instead of dried coriander.
- In a large pot over medium-high heat, heat the vegetable oil. Add the chopped onion and carrots and cook for 1 to 2 minutes until they start to soften.Stir in the grated garlic, ginger, and cilantro stems. Cook for another minute.
- Add the chicken stock, soy sauce, and sesame oil. Bring to simmer
- Meanwhile, chop the mushrooms into bite-sized pieces. Cut the bok choy into quarters, keeping the leaves and stems intact. Add the bok choy, mushrooms, and cilantro leaves to the pot. Stir everything together to combine.
- Add the dumplings to the pot and stir gently and bring the mixture to a boil. Allow to cook according to the dumplings' instructions on the pack. Finally add your chopped green onions. Taste and adjust the salt if needed.
Notes
- Each serving is 4 dumplings and about 1 and a half cups of soup.
