What is Chimichurri Sauce?

Chimichurri Sauce is a classic green sauce made with fresh parsley, garlic cloves, olive oil, vinegar, and chili flakes (+ salt, pepper, oregano). It comes from Argentina and Uruguay and is most famous for topping on gilled meat, especially steak. I love to pair chimichurri sauce with baked salmon just like in my Baked Chimichurri Salmon recipe!

What does Chimichuri sauce taste like?

Chimichurri Sauce tastes fresh, tangy, and garlicky. It has a little spice from chili flakes and a smooth finish from olive oil. The herbs make it refreshing, and the vinegar adds a zesty kick.

What is Chimichurri sauce used for?

Chimichurri Sauce is perfect as a topping, marinade, or dip. It’s amazing on grilled meats like steak or chicken, drizzled over fish, or paired with veggies. You can also use it to marinate proteins or as a tasty dip for bread and potatoes.


  • Fresh Parsley (you can also use coriander, or a mix of coriander and parsley)
  • Olive Oil
  • Garlic Cloves
  • Lemon Juice
  • Vinegar (I used white wine vinegar)
  • Salt
  • Red Pepper Flakes
  • Oregano
  • Black Pepper

  • In a bowl, combine chopped fresh parsley, olive oil, lemon juice, vinegar, salt, red pepper flakes, oregano, and a crack of black pepper.
  • Grate 2 garlic cloves.
  • Mix everything to combine. That’t it!

I made Chimichurri Sauce to pair with my baked salmon, and it turned out amazing! I marinated the salmon with the sauce before baking it, but I saved some to drizzle over the fish once it was out of the oven. I served it alongside my homemade crispy baked wedged potatoes and some steamed broccoli.

Ingredients
  

  • 1 Cup chopped parsley
  • 1/2 Cup olive oil
  • 2 Garlic cloves grated
  • 2 Tbsp Lemon juice
  • 3 Tbsp Vinegar
  • 1/4 tsp Salt
  • 1/2 tsp Red pepper flakes
  • 1 tsp Oregano
  • Black pepper A crack

Instructions
 

  • Start by washing the fresh parsley.
  • In a bowl, combine chopped fresh parsley, olive oil, lemon juice, vinegar, salt, red pepper flakes, oregano, and a crack of black pepper. Grate 2 garlic cloves and mix everything together until well combined.
