Understanding the Ingredients

  • Flour: In my Vanilla cake recipe, I mention that both all purpose and cake flour can be used, in my Chocolate cake recipe I only use all purpose because cake flour is too thin for the recipe. For this recipe, you can use both, but I use all purpose.
  • Eggs: Just like most of my recipes, the eggs are whipped for a few minutes to aerate. I get asked if the eggs need to be at room temperature; and I always say to use whatever you have on hand. Although, it’s always better to have room temperature ingredients to facilitate the incorporation process, we all know no one wants to wait for the eggs to come at room temperature when you’re in a hurry. So, use whatever is available in your kitchen!
  • Baking Powder: Baking powder is the leavening agent in this recipe, avoid using baking soda whenever there is a “white cake” involved because a lot of times it turned my cake brown.
  • Cocoa Powder: Whenever a recipe calls for cocoa powder, I always emphasize the importance of investing in a good quality one. While quality ingredients are essential for all recipes, cocoa powder plays a particularly significant role. Let me share a personal experience; I once used a cheaper cocoa powder in my beloved chocolate cake recipe, and the result was disappointing, yes my own amazing chocolate cake recipe! So just buy good cocoa powder.

Common Questions I get Asked:

  • Can I use this recipe for a tiered cake? Yes. This recipe is actually very sturdy and is perfect for a tiered cake! Feel free to use it for wedding cakes, birthday cakes, …
  • Can I make a different design than the one in the video? Absolutely! Be as creative as you want when pouring both the vanilla and chocolate batters in your pan, you can also use a different pan (bunt cake pan, sheet cake pan,…).

Ingredients

  • 4 Eggs
  • 3 Cups All-purpose Flour (or cake flour)
  • 1 ½ Cups Granulated sugar
  • 1 ¼ Cup Milk
  • 2 tsp Baking powder
  • ½ Cup Vegetable oil
  • 1 tsp Vanilla
  • Pinch Salt
  • 3 Tbsp Cocoa powder + 3 Tbsp Milk

Instructions

  • In a bowl, beat eggs until foamy. Add sugar and beat on medium-high speed until lighter in color (2-3 minutes).
  • Add oil and combine. Set aside.
  • In a separate bowl, combine flour, baking powder, and salt.
  • Add half of the flour mixture to your wet ingredients. Sifting the flour is always better. Mix on low until combined.
  • Add half of the milk, and mix. Then repeat the previous process by adding the remaining flour, mixing, the remaining milk, the vanilla, and mixing until everything is combined. Make sure to never over-mix so set your mixer speed on the lowest.
  • Pour 1/3 of the batter into a separate bowl.
  • In a small bowl, combine cocoa powder and milk (3 Tbsp) to form a paste. Add that paste to the 1/3 of the cake batter and stir.
  • Grease pan and start adding the cake batter a flavor at a time (1/4 cup of vanilla, then a little less chocolate, and repeat).
