This sumac salad is something I like to put together when I’m making a Mediterranean-style meal. It’s simple, fresh, and full of flavor. The mix of tomatoes, cucumber, onion, and parsley is easy to prep, and the sumac gives it a nice tangy taste.
It pairs well with grilled chicken, rice bowls, wraps, or anything that needs a fresh side. I often serve it with my healthy chicken shawarma bowl, and it always works.

What you need to make Mediterranean Sumac Salad:
- Cherry Tomatoes (You can use regular tomatoes as well)
- Cucumber (I used English cucumber)
- Fresh Parsley
- Red Onion
- Salt
- Sumac
- Olive oil

What is Sumac?
Sumac is a tangy, lemony spice made from dried berries of the sumac plant. It’s commonly used in Middle Eastern and Mediterranean dishes and adds a refreshing, zesty flavor to salads.
Can I substitute Sumac?
There isn’t really an actual substitute for Sumac, you can however replace it with a splash of lemon juice or vinegar. Again, these won’t replicate sumac exactly, they’ll just give your dish that citrusy tang.
Steps to Make this Simple Mediterranean Salad:
- Start by washing and chopping your fresh parsley. Wash and cut all the remaining vegetables (tomatoes, cucumbers, and onion).
- Add your vegetables to a bowl, add salt, sumac, and olive oil.
- Mix everything together.

I paired my Mediterranean Sumac Salad with a healthy chicken shawarma bowl. It had a base of basmati rice, the sumac salad, and chopped lettuce mixed with lemon juice and salt. I topped it with my oven-baked BBQ-style chicken shawarma and a drizzle of my homemade tahini sauce.
