Drain and rinse the chickpeas well.Add the chickpeas, garlic, and a pinch of salt to your blender or food processor. Blend for a few seconds to break everything down.Scrape down the sides to make sure it all blends evenly.Add the lemon juice, tahini, and a bit of water. Blend again until it starts to come together.
Drop in 2 to 3 ice cubes and blend until the hummus is smooth and creamy.
Taste and adjust the salt or lemon juice if needed.
To store, scoop the hummus into an airtight container and keep it in the fridge.
When you’re ready to serve, transfer to a plate or bowl. Drizzle with olive oil and decorate however you like. I usually go with a few mint leaves.
