High Protein Mango Chia Seeds Pudding

High protein, low calories, high fiber, and no coconut milk: this mango chia seed pudding is so easy to make and requires very few ingredients.

  • Take 1 mango; peel it, cut the cheeks away from the pit, and score the flesh to easily scoop out all of the fruit.
  • Add to a blender and blend until smooth, then use a sieve to extract the juice and add it to a bowl. If you like pulp, you can keep the pulp and not sieve.
  • To the same bowl, add the yogurt, milk, chia seeds, and vanilla extract. If you want to make it sweeter, add a tablespoon of honey or more; it's up to you!
  • Mix everything with a hand whisk, then cover with plastic wrap and let it sit in the fridge for at least 2 hours. I prefer to keep it overnight and enjoy it the next morning.
  • When the pudding is ready, scoop a bit into your serving bowl, garnish with fresh mangos (from the second mango you didn't use). Layer however you like! Enjoy!
