Take 1 mango; peel it, cut the cheeks away from the pit, and score the flesh to easily scoop out all of the fruit.
Add to a blender and blend until smooth, then use a sieve to extract the juice and add it to a bowl. If you like pulp, you can keep the pulp and not sieve.
To the same bowl, add the yogurt, milk, chia seeds, and vanilla extract. If you want to make it sweeter, add a tablespoon of honey or more; it's up to you!
Mix everything with a hand whisk, then cover with plastic wrap and let it sit in the fridge for at least 2 hours. I prefer to keep it overnight and enjoy it the next morning.
When the pudding is ready, scoop a bit into your serving bowl, garnish with fresh mangos (from the second mango you didn't use). Layer however you like! Enjoy!
