High protein, low calories, high fiber, and no coconut milk: this mango chia seed pudding is so easy to make and requires very few ingredients.

If you’re here after the mango chia seed pudding that went viral on TikTok, today I present to you a version that is high in protein, low in calories, and doesn’t have coconut milk in it. As much as the version with coconut milk is delicious and creamy, I know that some people might be avoiding it because it’s high in fat or avoiding it completely because they’re allergic.

Ingredients to make a high protein mango chia seeds pudding:
- Mangos: I use fresh mangos, make sure you buy sweet ripe mangos that are sweet.
- Chia Seeds: These give the pudding its iconic gel texture while adding a solid boost of fiber and healthy fats.
- High protein yogurt: I use unflavoured and unsweetened Skyr, you can use sweetened if you prefer. Make sure you get something that has around 10g of proteins er 100g.
- Vanilla extract: adds warmth and a really good flavour to the pudding. If you buy vanilla yogurt, leave the vanilla out!
- Milk: I use regular 2% milk, you can use almond or any other types you prefer. If you want to make the coconut version, this is where you swap milk for coconut milk.

Can I use frozen mangos to make mango chia seeds pudding?
Yes! Just make sure to thaw it first so it blends smoothly. Frozen mango is great if fresh isn’t in season.
What is the best milk to make chia pudding?
I use regular 2% milk, but you can use any milk you like; coconut would be my second option because it pairs so well with mangos; Oat, dairy, or even cashew milk work as well.
Can I skip the yogurt?
You can but it also won’t be as high in protein. Also, the texture will be a little lighter, but still creamy. You can add a bit more milk or even use a plant-based yogurt if you prefer.
Storage Tips:
This pudding keeps well in the fridge for up to 4 days. Store it in jars or airtight containers. If you’re making it ahead, hold off on adding the fruit topping until the day you’re eating it so it stays fresh. If you’re going to eat this in the next 2 days, you can add the fresh mangos to the jars already for a grab and go breakfast, mangos (unlike strawberries and bananas) stay fresh longer than other fruits.

High Protein Mango Chia Seeds Pudding
Equipment
- 1 Food Processor
- 1 Hand Whisk
- 1 Bowl
Ingredients
- 2 Mangos
- 1½ Cups High Protein Yogurt
- ¾ Cups Milk
- ½ Cup Chia Seeds
- 1 tsp Vanilla Extract
Instructions
- Take 1 mango; peel it, cut the cheeks away from the pit, and score the flesh to easily scoop out all of the fruit.
- Add to a blender and blend until smooth, then use a sieve to extract the juice and add it to a bowl. If you like pulp, you can keep the pulp and not sieve.
- To the same bowl, add the yogurt, milk, chia seeds, and vanilla extract. If you want to make it sweeter, add a tablespoon of honey or more; it's up to you!
- Mix everything with a hand whisk, then cover with plastic wrap and let it sit in the fridge for at least 2 hours. I prefer to keep it overnight and enjoy it the next morning.
- When the pudding is ready, scoop a bit into your serving bowl, garnish with fresh mangos (from the second mango you didn't use). Layer however you like! Enjoy!
