Taco Stuffed Sweet Potatoes (Healthy Tacos)

I love finding ways to make my favorite comfort foods healthier, and these sweet potato tacos are a perfect example. If you know me, you already know how much I love Mexican food; my family even teases me about it, as I mention in my Pulled Chicken Tacos recipe.

Whenever I’m craving tacos but still want to stick to a low-carb, high-protein diet, these are my go-to. Sometimes, I make them in a bowl form by dicing and roasting sweet potatoes, then topping them with taco fillings. But honestly, stuffing the potato just looks so much better and tastes amazing (and you get to skip the part where you need to dice a sweet potato, these things are not easy to dice!).

  • Sweet Potatoes (Check out How To Bake Sweet Potatoes in The Oven)
  • Ground Beef
  • Onion
  • Tomato Paste
  • Olive Oil or Butter (or both)
  • Salt & Pepper
  • Paprika powder, Onion powder, and Garlic powder (you can also replace these spices with taco seasoning)

For the toppings I used:

  • Shredded Cheese
  • Tomatoes
  • Sour Cream
  • Mashed Avocados (Avocado, lemon juice, salt & pepper)
  • Butter + salt (optional)
  • Cilantro (optional)

  • Bake the sweet potato at 428°F (220°C) for 40 minutes to 1 hour until tender. You can check “How To Bake Sweet Potatoes in The Oven” for all the info.
  • Meanwhile, on medium heat, add butter or olive oil in a pan (you can use a combination of both too), add diced onions, and cook until golden.
  • When onions are slightly golden, stir in tomato paste and mix well.

  • Add the ground beef to the pan with the onions and tomato paste. Sprinkle in salt, pepper, paprika, onion powder, and olive powder. You can definitely replace the spices with taco seasonings as well!
  • Mix everything together, stir occasionally until the meat is cooked and well seasoned.

  • Once the sweet potato is cooked, carefully remove it from the oven; be careful not to burn your hands!
  • Cut it open and gently mash the inside with a fork. I like to add a teaspoon of butter and a pinch of salt to make it creamy, but you can also add black pepper or skip the seasoning and butter altogether if you prefer.
  • Mash until smooth and fluffy.

  • Add the seasoned beet.
  • Add shredded cheese. After this step, you can pop it in the microwave to melt the cheese or even back to the oven for a few minutes.
  • Proceed by adding whatever toppings you want!

For the toppings, I added some diced tomatoes, sour cream (you can also add plain greek yogurt if you want), and some mashed avocados. To make my mashed avocados, I use about 1 ripe avocado, a pinch of salt and pepper, and a tsp or 2 of lemon juice; it’s super easy, you can also add hot sauve to it if you want a spicy kick!

And finally I added some chopped cilantro, let’s be honest these were mostly for the picture 😄 but it goes so well with this of course; and limes, you squeeze some lime juice on the potatoes when served and it’s really good!

Taco Stuffed Sweet Potatoes (Healthy Tacos)

Ingredients
  

  • 3 Large Sweet Potatoes
  • 1 tsp Butter or Olive Oil
  • 1 Small Onion Diced
  • 2 tbsp tomato paste
  • About 225g Ground Beef
  • 1/4 tsp Salt
  • 1/4 tsp Onion Powder
  • 1/4 tsp Garlic Powder
  • 1/4 tsp Paprika
  • 1/8 tsp Black Pepper

Instructions
 

  • Brush the sweet potatoes with olive oil, sprinkle some salt, poke some holes, and bake in the oven at 428°F (220°C) for 40 to 60 minutes, or until tender.

  • In a pan, heat butter or olive oil (or both). Add diced onions and cook until slightly golden. Stir in tomato paste and mix well.

  • Add ground beef to the pan and season with salt, onion powder, garlic powder, paprika, and black pepper (you can also use taco seasoning insead). Cook until the beef is browned and fully cooked.

  • Carefully cut open the baked sweet potatoes and mash the inside slightly. Add a teaspoon of butter and a pinch of salt for creaminess, if desired, and mix again.

  • Fill with the beef mixture and add toppings as described above.
