A recipe for salmon, made in the oven, baked to perfection with a crispy outside, a tender and juicy inside, and covered with a delicious Chimichurri sauce!

Looking for a fancy dinner that’s actually super easy to make? This baked salmon with my Chimichurri sauce has become my go-to impressive meal, the fresh herb sauce makes the salmon taste incredible. I often serve it with my homemade oven-baked wedged potatoes on the side, and some steamed vegetable, as simple as that.
The best part is how simple it is: just spread the chimichurri over the salmon and let it bake until perfectly tender. I make this almost weekly now because it looks and tastes like restaurant food, but it’s so easy to pull together at home. Every time I serve it to family or friends, they think I spent hours in the kitchen, but it’s really just a few simple steps!

What you need to make Chimichurri Baked Salmon:
- Salmon Filet (the filet I used came to 650g)
- 1 Tbsp of my homemade Chimichurri sauce
- Pinch of salt
- For the sides, you can add whatever you like, I plated my dish with some baked wedged potatoes , and some steamed broccoli.

Steps to Make Baked Chimichurri Salmon
- Pat the salmon fillet dry with a paper towel. If using frozen salmon, first thaw it completely. Drying the salmon helps it bake evenly and get a crispier surface in the oven.
- Sprinkle a pinch of salt on the filet, don’t add too much because the Chimichurri sauce already has salt in it; you can as well opt this step out (it’s really about preference).

- Place the salmon on a baking dish lined with baking paper. Spoon about a tablespoon of my homemade chimichurri sauce on the filet, make sure you save a bit for serving. Use a brush, or a spoon (whatever you have on hand) to evenly spread the sauce, covering the entire fillet.

- Bake the salmon in the oven at 450°F (about 230°C) for 10 to 15 minutes. After baking, switch to broil for an additional 5 minutes to give the surface a nice, slightly charred finish.

I served the baked salmon with steamed broccoli for some green and my homemade baked wedge potatoes on the side. You should definitely try these potatoes! They’re easy to make, nice and crispy on the outside, and also cooked in the oven. The salmon fillet was enough for four servings. I added extra chimichurri sauce on top of the salmon for more flavor, and you can put some on the side too if you like.

Salmon with Chimichurri Sauce (Baked in the Oven)
Ingredients
- 1 Salmon Fillet 650g
- 1 Tbsp Chimichurri Sauce
- Pinch Salt
Instructions
- Pat the salmon fillet dry with a paper towel. If using frozen salmon, make sure it is fully thawed before drying.
- Place the salmon on a baking dish lined with baking paper. Sprinle a pinch of salt on the filet, don't add too much as the sauce already has salt in it. Brush it with chimichurri sauce, leaving some sauce for serving, and sprinkle with salt.
- Bake the salmon at 450°F (230°C) for 10–15 minutes. Then broil for 5 minutes to achieve a slightly crisp finish.
