Halloween Prosciutto & Mozzarella Skewers

Halloween is one of my favorite holidays and I love coming up with creepy food ideas. These mozzarella prosciutto skewers were a fun little project and they really do look like eyeballs. The red balsamic glaze makes them extra spooky.

I have to admit they were a bit hard to eat because they look so real but that is what makes them perfect for Halloween, I’m not gonna lie I had to remove the olives to make it easier! But, they’re super good, so I really hope you give them a try, they take 10 minutes to make!

  • Bocconcini: These are small mozzarella balls, they act as the eyeballs. The small size works best for skewers and they hold the shape well.
  • Prosciutto: This represents the muscle at the base of the eye, you can use any type of thin ham but Prosciutto is the best when paired with Mozzarella.
  • Green & Black Olives: These form the pupils. Slice a green olive into rings and place a piece of black olive in the center for the perfect spooky look. If you’re using another combination of ham and cheese, pickles would be a good option instead of green olives.
  • Balsamic Glaze: the best glaze with anything mozzarella and prosciutto, the best thing is that it can be colored!
  • Beetroot Powder: The ingredient that took everything to the next level! You won’t taste it one bit in the glaze, what I love about beetroot powder is not only it colors super nicely, it’s also healthy and free of additives. You can use food coloring of course, but keep in mind it will thin out the glaze unless you find powder color. Beetroot powder thickens the glaze a bit which makes the blood super realistic.

1. Cut each slice of prosciutto into 3 long strips.

Take one strip and wrap it around a mozzarella ball. Repeat with all the mozzarella balls. Thread the 3 wrapped mozzarella balls onto a skewer. You can add less or more, whatever you want.

2. For the olives: take the pitted green olives and slice them into rings. For the black olives, use a straw to punch out neat round pieces that fit right into the center of the green rings.

3. Add a piece of green olive onto each mozzarella, then press a black olive round into each green olive ring to create the pupil.

4. Mix balsamic glaze with beetroot powder until it’s well combined and you don’t see the beetroot powder particles anymore. Drizzle over the skewers so it looks like blood.

Halloween Prosciutto & Mozzarella Skewers

  • Slice each prosciutto piece into 3 long strips. Wrap one strip around each mozzarella ball, then thread the wrapped mozzarella balls onto skewers (I used 3 balls per skewer).
  • Slice the green olives into rings, I used pitted olives to make it easier. Use a straw to punch small rounds out of the black olives.
  • Now, place 1 green olive ring onto each mozzarella, and press one black olive circle inside each green ring to create the pupil.
  • Stir beetroot powder into the balsamic glaze until it's very well combined, the glaze will get thicker as well . Drizzle over the skewers so they look like bloody eyeballs.
