Hot Chocolate Fudge Sauce

I actually found this chocolate fudge sauce recipe buried in an old YouTube video I made, it was one of four cake fillings I shared, and I remember thinking, this one deserves its own spotlight (I mean they all do, but I just got back to filming). So I decided to bring it back, give it a little refresh, and test it out in the microwave to make it even faster and use less dishes of course… and it worked so so well!

The original recipe called for 60g of chocolate, but I only had 50g on hand, and honestly, it turned out perfect. Rich, glossy, and ready in two minutes with just one bowl and three ingredients. No stovetop, no mess, no piles of dishes.

This fudge is amazing poured over vanilla ice cream (the perfect time to post since summer is approaching!). I also love using it as a filling for cupcakes, or even drizzle it on top of buttercream.

Once it cools in the fridge, it sets a little, kind of like thick peanut butter. Still soft enough to spoon or spread, but firm enough to hold its shape. So good. Additionally, if you want that hot fudge consistency again, you just pop it in the microwave for 20 to 30 seconds, give it a quick stir, and it’s good to go! To sum it up, it is best to enjoy this as soon as you make it, while still hot, and best paired with vanilla ice cream!

  • Condensed milk
  • Chocolate bar or chocolate chips (use something that tastes good, the better quality, the better the taste of the fudge)
  • Vanilla extract (optional but it gives the fudge a nice taste so I recommend it)

  • In a microwave-safe bowl, add the condensed milk and chocolate (I used dark chocolate, you can use milk too). If you’re using a chocolate bar, chop it up first so it melts evenly. If you’re using chocolate chips, just toss them right in. Mix them together a bit before microwaving.

  • Microwave for 30 seconds, then take it out and stir.

  • Return it to the microwave for another 30 seconds. When you remove it, you might see a bit of crust or firmness on top, that’s totally normal. Just stir it well (you might need to stir a bit fast at this point). The chocolate sauce will suddenly turn silky and smooth.

  • Add the vanilla and mix again. Once everything is smooth, it’s ready to use right away or store for later! (read storage tips below).

Storage Tips:

This hot chocolate fudge sauce is better used right away while hot, if you don’t want to use it right away, you can store it in a clean jar. To store it longer, keep it in the fridge for up to 2 weeks. It will thicken as it chills, but when you’re ready to use it again, just warm it up in the microwave for a few seconds (between 20 and 30 seconds will be enough) to bring back the pourable texture.

FAQs:

Can I use milk chocolate instead of dark chocolate?
Yes! You can use milk, dark, or even semi-sweet chocolate. Just know that dark chocolate will give you a richer, more intense flavor.

Can I double the recipe?
Absolutely. Just use a bigger bowl and heat it in 30-second intervals, stirring in between, until smooth.

Does it harden completely?
It thickens in the fridge but stays soft, like a thick peanut butter. It’s still spreadable and scoopable, just not runny. It’s easy to get it back to its runny consistency by placing it in the microwave for a few seconds.

Can I use it as a frosting?
It’s great as a drizzle or filling (filling for cupcakes more than cakes), but not ideal as a full frosting on its own, if you’re looking for a chocolate frosting that is easy to make and is ideal to cover a cake and fill, I would recommend checking the frosting in my chocolate cake recipe (I also have several buttercream recipes under my buttercream categories).

  • 50 g Chocolate

  • Microwave the mixture for 30 seconds. Take it out and give it a good stir. The chocolate will have started to melt.

  • Put it back in the microwave for another 30 seconds. When you take it out, the top might look a little dry or crusted, don’t worry that is totally normal! Just stir it well and a bit fast. It will come together into a smooth, glossy sauce.
